ATP冷光反應技術原理及應用簡介：

ATP生物冷光反應技術是一種快速檢測方法，用以檢測生物ATP的含量。此方法為美國航天局于1960年代發展出來的技術，當初發展此項技術的目的是希望能用以檢測外太空是否有生命物質存在，其反應原理與螢火蟲體內發光反應相同，在熒光素（luciferin）與熒光素酶（luciferase）存在下，ATP與luciferin及luciferase催化下產生淡藍色的光。

近來生物ATP冷光反應在食品與醫藥領域中被廣泛使用。 以原核生物而言，一只細菌體內約含2 x 10-18 ?mol ATP； 真菌細胞則含10-15 ～10-16 ?mol ATP。應用ATP冷光反應技術檢測生菌數時，需先將食品中非微生物的ATP水解，再將微生物體內的ATP釋放出來，反應后以ATP生物冷光儀偵測。 若檢測食品接觸表面的清潔度，則無需去除食品中的ATP，直接測量即可。檢測結果則以相對吸光值（relative light unit， RLU）的多寡來表示ATP濃度的高低，藉此反推微生物含量和可能的食物殘留，以表示食物接觸面清潔度的情況。

目前ATP生物冷光反應技術應用在各項食品產業，包括生乳生菌數估算、環境設備清潔評估、畜產業中屠體的污染評估、果汁產業的生菌數估算、制酒工業及飲料業等。
